Finally got the rise I needed!

I began my sourdough journey in Late June. But a few years ago, hubby was a homemade wine maker In this house, so I think lingering yeasts were causing my own starter to never become fully active. So I got some established flakes from Kensington, and OH MY! After following the directions to the letter, I finally have an active starter and am making some gorgeous breads! Thank you so much for helping me keep on my sourdough journey!

Concerns

I haven't even attempted to make any sourdough bread yet with this starter but am really excited to try it! I only have a couple of concerns so hopefully someone can help me. The instructions say to "discard" a few times..to me that means to throw it out but I have a feeling I shouldn't. Also I'm not a frequent baker..what do I do with all the leftover? Keep in the fridge? On top of the fridge?

You could use it for 'discard' recipes! See also https://kensingtonsourdough.ca/pages/sourdough-starter-and-discard-are-the-same-thing

But normally you would be throwing away some starter when feeding, if you cannot find a way to use it all for discard recipes.
