Really excited to bake

Arrived quicker than expected.

Really clear, easy to follow instructions - love the back story - technically it's older than 150 years old (that's a bonus)

Starter is coming to life & giving a predictive rise & fall - cant wait to be able to use it - not long to wait now - better to wait a few more days than start too early and have a disappointing result.

This starter replaces an 87 year old starter that I had previously, - the jar had got smashed during a house move :-(

My first real success!

I am still working on getting my sourdough "sourer". With that said, my first loaf can out pretty good. Can I assume that the more I feed and discard, the more sour it will become?
